From Oops to Yum!!!

Ever had a cooking ‘situation’ that turns from oops! to Yum?!!!  I popped one of grandchildren’s favorite treats into the oven and realized about 5 minutes later that I had forgotten a key ingredient!  Rather than let it go to waste, I quickly pulled it out of the oven and put the missing ingredient in, stirred it up and back into the oven it went!  When it was done,  it was even better than the original recipe!  So, you must be wondering…what happened that made a good recipe better?!! Some of the chips had begun to ‘melt’ and  OOPS turned to YUM!  Sooooo…now instead of putting 2 cups of chocolate chips in the recipe that follows,  I add one cup of chips and THEN microwave 1 cup of chocolate chips and add that to the dough…and YUM, I have an “oops” turned to “yum” recipe!

Cowboy Cookie Bars

1 cup butter

1 cup brown sugar

1 cup white sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 teaspoon soda

1/2 teaspoon salt

1/2 teaspoon baking powder

2 cups rolled oats

2 cups semi-sweet chocolate chips

Cream sugars, butter, eggs and vanilla until fluffy.  Sift dry ingredients and stir in.  Add oatmeal, 1 cup chocolate chips and THEN microwave 1 cup of chocolate chips and then add this to the dough.  Mix and spread into a 9/13 pyrex dish.  Bake at 350 degrees for about 30-35 minutes.

I like to ice mine with cream cheese icing! (1 stick of butter, 8 ounces of cream cheese, 1 box powdered sugar and a little vanilla – mix and spread over bars)
