Janet’s Dressing Recipe

Janet Pearson made this dressing for our Thanksgiving party, and it was delicious!  It’s so moist and flavorful you won’t need to cover it with gravy, but the giblet gravy recipe that’s included is yummy and easy.  Let us know what you think about this recipe, and if you added anything special to make it your own. 

Start with two packages of yellow cornbread mix, Jiffy, Martha White, etc., made according to directions.

Drop a small amount of bacon grease in a hot skillet, sprinkle with corn meal (I use two packages to each iron skillet and make four skillets).

When cornbread is done and cools, crumble into a large bowl, then crumble 4 slices of toasted light bread into bowl.

You can use a fryer or hen for boiling, with a little onion and celery added for flavor. I also add 3-4 breasts to the pot.

Boil for about 3 hours until it comes off the bone. Set aside.

Strain the broth, then use a large measuring cup to add broth to bread crumb mixture until moist.

Add 1 large can (or 2 small cans) of cream of chicken soup, stir well.

Chop about 2 cups each of green onion; white onion; and celery. Put in iron skillet with 1 stick of butter and a cup of chicken broth, then simmer slowly. Add to moist cornbread mix.

Boil 8-9 eggs. Mix cooked yolks and chopped whites into dressing.

Add 4 raw eggs and mix well.

Spray a large pan with non-stick cooking spray. Add the dressing and cook at 375 for approximately 2 hours. Remove when top is nice and brown.

Giblet Gravy

Put one small container of giblets, or the giblets from the chicken you used to make the dressing, in a small saucepan. Add some celery and onion, cover with water. Bring to a boil, then simmer for about 15 minutes until they are tender.

Remove when done and chop fine.

Remove onion and celery from the broth.

Heat 4 Tablespoons of bacon grease with 4 Tablespoons of flour and stir until it turns a nice caramel color.

Add giblets, broth and 1 stick of butter. Cook very slowly while stirring.

Salt and pepper to taste.
